Method
Chicken Marination
- Start with blending all ingredients for the chicken marinade in a blender, except the chicken of course.
- Transfer the marinade into a medium sized bowl and taste for salt.
- Using tongs, add the chicken breast into the marinade and set aside for a couple of hours.
- Grill or fry in a saute pan on medium-high heat for 4 to 5 minutes on each side. Until cooked through.
- Transfer to cutting board. Let chicken rest for 5 minutes.
- Chop in cubes for bite sized pieces.
Yellow Rice
- Add water and rice into a medium sized saucepan. Add rest of the ingredients.
- Set heat to medium until rice comes to boil for 12-15 minutes.
- When rice is cooked to desire doneness. Drain water and transfer back into saucepan.
- Cover with lid on low heat. Cook for 10 minutes.
- Turn off heat and remove bay leaf.
White Sauce
- Combine all ingredient into a blender and blend until a smooth consistency is formed.
- Taste for salt and transfer into a bowl.
Hot Sauce
- Combine Sirarcha and Chilli sauce in a small bowl and mix until well combined.
Assembly
- Divide rice, lettuce and tomatoes amongst 4 to 5 servings. Pile chopped chicken on top, drizzle white sauce and hot sauce. Serve warm.
